Prawn thai yellow curry

Back to work and back to some attempt at healthy eating. For lunch today I had Covent Garden carrot and corriander soup. I thoroughly enjoyed it but was still pretty peckish after, so I tucked into some of the sweets and biscuits we bought back from Spain, not so much healthy eating there.

By dinner I was absolutely ravinous so I decided to cook a prawn thai yellow curry. Not too much to say on this as after getting back from holiday we were pretty low on ingredients. So I just used a green pepper, a tin of bamboo shoots, some thai yellow curry paste, coconut milk, fish sauce and prawns, served with thin egg noodles. Very tasty and just about filled me up.
